ホンマでっか！？レストラン｜絶品・ポテトコロッケのレシピ・作り方

今回の料理は「ポテトコロッケ」。
ポテトコロッケのレシピ・作り方を、
紹介してくれるのは、
「神田小川町・とんかつ専門店 ポンチ軒」の、
橋本正幸さん。
絶品ポテトコロッケのレシピ・作り方
作り方①
具材の下ごしらえ
じゃがいもを蒸かす。
使用するじゃがいもの種類は、
メークイーン。
煮崩れしにくい、
メークイーンで、
食感を残す。
芋を蒸かしている間に、
玉ねぎのみじんを作る。
食感を楽しむ為に、
玉ねぎのみじんは粗めにしておく。
作り方②
具材を炒める
豚ひき肉を炒めていく。
使用する豚ひき肉は粗め。
粗めの方が、
食感を残しやすい。
豚肉の旨味は、
じゃがいもと相性が良いので、
使用するひき肉は豚肉がオススメである。
炒める際は、
豚肉の水分を飛ばす為、
弱火で加熱していく。
強火の場合、
ひき肉がダマになり易いので、
避けた方が良い。
ある程度ひき肉に、
火が通ったら、
みじんになった玉ねぎを加える。
蒸かしあがったじゃがいもは、
そのままひき肉&玉ねぎの鍋に移し、
痛めながら軽くつぶしていく。
合わせ調味料の配合（20個分）は、
塩：5g、胡椒2g、シーズニングソース10cc、
チキンブイヨンスープ：100cc、片栗粉20g。
シーズニングソースは、
タイの調味料で、
日本で言うとたまり醤油のような、
調味料である。
シーズニングソースが無ければ、
醤油でも代用可能。
合わせ調味料の決め手は片栗粉で、
片栗粉を入れる事で、
コロッケの中がトロトロになる。
合わせ調味料を混ぜたら、
鍋の中にまんべんなく投入。
混ぜすぎるとドロドロになってしまうので、
調味料を加えた後は、
混ぜ過ぎない事が重要。
これでコロッケのタネは完成。
作り方③
タネの成形
コロッケのタネは、
常温で余熱をとり、
冷蔵庫で2～3時間程冷やすと良い。
しっかりとタネは固めた方が、
成形しやすい。
通常は揚げる際、
小麦粉→卵→パン粉の順で衣はつけるが、
小麦と卵は予め混ぜてしまう。
卵と小麦粉を一緒にする事で、
コロッケの衣が厚くなり、
直に火が入らず、
ゆっくりと火が入るので、
ホクホクの食感になる。
タネは最初は球体の形に成形し、
パン粉をつける際に、
潰すようにする。
作り方④
油で揚げる
揚げる油の温度は約140度。
大量に揚げる時は、
温度は下がるので約160度位がベスト。
じっくり揚げる（10分）と、
中身がトロトロのコロッケになる。
最後に高温にして、
油切りをして完成である。
