《深イイ話》鮮魚に潜む危険！生サバには寄生虫アニサキスが！死の可能性もある急激な腹痛の回避法は？

今回は身近な危険回避法スペシャル。
鮮魚に潜む寄生虫アニサキス
日本人にとって切っても切れない、
生魚に危険が潜んでいる。
それが「アニサキス」と呼ばれる寄生虫である。
サバやイカをはじめ、
多くの魚介類の体内で生存している。
東京医科歯科大学大学院の、
太田伸生教授によると、
この寄生虫は胃の粘膜に潜り込もうとするという。
その結果、
救急車を呼ばなければならない程の、
急激な腹痛を起こしてしまう。
とれたての魚を調べると、
特にこのアニサキスが、
非常に元気の良い状態でいるという。
つまり感染のリスクからすると、
とれたての魚というのは、
非常に重要な要素である。
但し、焼く・煮る・冷凍といった、
熱を通すことによって比較的簡単に、
アニサキスは死ぬという。
川合俊一が突然腹痛！
死にかけてアニサキスから学んだこと
芸能界では、
「生サバ」が大好物であったという、
川合俊一がこのアニサキスの被害者である。
川合俊一はこれまで4度のアニサキスの被害に遭い、
4度目は死にかける程、
酷い事になった。
この死の宣告をきっかけに、
川合俊一は
「少しでも命の危険の可能性がある事は何もしない」
という選択に終始するようになったという。

寄生虫アニサキスの回避法
医療ジャーナリストの森田豊によると、
アニサキスはサバやイカなどの生物に入っていて、
アニサキスの幼虫は1～3cm程の大きさであるという。
このアニサキスのもう1つの回避法は、
口の中によく噛み砕く事であると説明。
またお寿司屋さんで生サバを食す時に、
比較的安価のお寿司屋さんの方が、
一度冷凍した魚を使用するので、
アニサキスに感染しにくくなると説明。
《もうちょっと調べてみた&所感》
よくサバは火を通せと言う話を聞きますし、
サバの刺身を食す機会はそうそう多くないはず。
裏にはこのような背景があったのですね。
但し一般的には、
牡蠣のように生サバ用、
焼きサバ用と分けて販売されているようなので、
生サバ用には何かしらの、
アニサキス対策が施されている可能性はありますね。
いずれにせよ、
市場に出回っている生サバを食して、
アニサキス感染するリスクは低いとは考えられますが、
リスクはゼロではない事をきちんと認識しておきましょう。
