店員は皆、西部劇さながらの、
アメリカンなコスチュームをしている。

アメリカテキサス州に住む、
カウボーイ一家のハリス家。
ハリス家のホームパーティに招待されたような雰囲気を、
お店のコンセプトにしている。
その為、子供達が喜ぶよう、
バルーンアートのプレゼントがある。
スタッフ全員がなんとバルーンアートを、
作成する事が出来るという。

無料で20種類が食べ放題
カウボーイ家族はステーキとハンバーグの専門店。
基本的なメニューはハンバーグとステーキだけである。
しかし、ハンバーグやステーキを頼むと、
無料の食べ放題もセットで付いてくる。
季節にあった新鮮な野菜で作ったサラダバーを筆頭に、
2種類のスープ、カレー、パスタまで食べ放題である。
食後のデザートを含めると、
20種類以上のメニューが食べ放題である。
ちなみに一番安いメニューである、
カウボーイハンバーグ（150g）1029円を頼んでも、
この食べ放題を無料で利用出来る。
ビュッフェのようにお腹いっぱいになる食事を、
1000円ちょっとで楽しめてしまう。

ハンバーグにはステーキ用贅沢肉を使用
これだけ食べ放題が付くと、
肝心のハンバーグがしょぼいのではないかと、

そこには秘密がある。
ハンバーグに使用されているお肉は、
本来ステーキ用のお肉である事が明かされた。

全て店内で調理
ハンバーグやステーキで使う肉の下処理は、
店の厨房で行い、
手作業で余分な部分を丁寧に取り除いている。
下処理を終えたお肉は分厚くカット。
そして分厚いお肉をミンチにして、
全て店内で調理されている。
チェーン店では、
工場でハンバーグの形まで作っている所が多いが、
カウボーイ家族では、
美味しさにこだわり、
成形まで全て手作業で行われている。

高温で焼き肉汁を閉じ込める
更にハンバーグの焼き方には、
ファミレスとは思えないこだわりがある。
溶岩グリラーと呼ばれる、
富士山の溶岩石を使用したで焼き器で、
遠赤外線の効果でハンバーグをふっくらと焼き上げる。
グリラーの温度は330度で、
高温で焼き、肉汁を中に閉じ込めるのである。

高温の水上機で蒸し焼き
そして焼けたハンバーグを、
スチームオーブンの中へと入れる。
上から高温の水蒸気が浴びせられ、
ハンバーグは蒸し焼きとなる。
こうする事で、
周りはこれ以上に焦がさずに、
中にまで火を通すことが出来る。
つまりファミレスとは思えないほど、
手間暇をかけて、
肉のおいしさが引き立つハンバーグが出来上がる。
