《相葉マナブ》買ってきた未開封のマヨネーズを冷蔵庫に保存するのは間違い！味を損なわない為には冷暗所へ保存！

私達がこれまで特に疑問を持たずに、
何気無く生活していた事には、
より良い方法が他にあるということが、
実は結構ある。
そこで、今回は身近な暮らしの中で、
今すぐ実践出来るより良い方法を検証しながら学ぶ。
教えてくれるのは文京学院大学・目白大学の、
橋本由愛子講師。
テーマは「よくある生活の注意点～食品編～」。
未開封のマヨネーズを冷蔵庫に入れてはダメ！
買ってきたマヨネーズを冷蔵庫にしまう事は、
皆が普通にやっている事だと思うが、
この行動に注意するべき点がある。
実は開封前のマヨネーズは、
冷暗所（暗い所）で保存するのが良いという。
調味料マイスターの山本美智子によると、
マヨネーズの主成分の酢・油・卵黄は、
熱によって分離しやすく、
また温度が低過ぎても分離する性質がある。
そこで室温よりもやや低い、
冷暗所での保存が適しているという。
但し、開封後は生モノと同じ扱いなので、
冷蔵庫で保存した方が良い。
《もうちょっと調べてみた&所感》
「冷暗所って冷蔵庫の事じゃないの？」
という方に解説差し上げますと。
冷暗所とは「温度が低く、光の差し込まない場所」を指すので、
広い意味では冷蔵庫も含まれるのでしょう。
但し、今回の場合、
常温よりもやや涼しめな暗所、
つまりシンク下の収納スペース等を指します。
人によっては、
シンク下に収納スペースがないという方も、
いるかもしれませんが、
その場合は冷蔵庫の野菜室がよろしいかと思います。
野菜室は冷蔵庫の中でも冷やされ過ぎていないので、
冷暗所の代わりとしては最適でしょう。
