《世界一受けたい授業》食材ゴミ（ロスフード）を活用したベジブロス！栄養満点ベジブロススープの基本レシピ（作り方）を紹介！

普段何気無く捨てている食材ゴミ（ロスフード）は、
年間約1800万tにのぼり、
この量は人口約4000万人が、
一年間に食べられる食事の量と同じである。
しかし食材ゴミとして捨てられる、
食材の切れ端こそ栄養が豊富な事が分かった。
そこで注目されているのが、
巷で話題のスープ「ベジブロス」。
調理方法は簡単で、
捨てていた果物の皮、野菜の芯やヘタ等を、
まとめて煮こむだけである。
今回はロスフードマジシャンの異名を持つ、
正徳大学教授の今井悦子先生が、
栄養満点のロスフードレシピを紹介してくれる。
「ベジブロススープ」の基本レシピはこのようになる。
①お湯に野菜の切れ端を入れる。
②約20分間弱火で煮込む。
③野菜を取り出し、ザルでこす。
④塩コショウで味付けして完成。
味はコンソメに似ていて、
和洋中の料理に活用可能であるという。

味は薄いコンソメスープのようになっていて、
これ単体で料理として味わうのは、
なかなか厳しいかなといった感じです。
薄めのコンソメスープが好きな人は良いのかもしれませんが。
しかしあくまでも「出汁（ダシ）」という認識で、
用いれば、
非常に美味しく活用出来るようなので、
